After years of cheap knives I was getting discouraged at having to saw through my food. I finally asked a friend of mine who is very knowledgeable about knives and kitchen products in general to help me out! J.A. Henckels is one of two of the TOP rated knife makers. I absolutely love these knives. The handles are weighted, they balance perfectly and cut like you wouldn't believe. I've had my set for a few months now and I still love using them. I highly suggest that you find a retailer that sells the knives so you can see how they fit your hand. I held an array of knives and these were the ones for me. It took some time and research but completely worth the investment. Amazon had the best prices around on them too! Take good care of them (NO DISHWASHERS! Hand wash and dry after use) and they will last a life time. Happy Cooking!

I've had my set of three twin cuisine knives and sharpening steel for roughly two years now. I can say that the blades themselves are excellent and up to nearly any cutting task that one might have in mind. I cook from scratch frequently and use my knives with relish on every thing from slicing baked chicken for nachos to dicing onions and potatoes for my breakfast fried potatoes. These knives handle any and all tasks with equal ease and litterally no deflection what-so-ever.

The handles however, are a different story. All three of the knives have multiple cracks in the handles and most of them go entirely through. This is despite the fact that they have nearly always been washed by hand.

In short, for those of you considering this series of knife, do so aware that it may not have the life span you'd expect for cutlery at this price point.
